The Bay Bar & Grill and A Stylish New Boutique

Karma Jimbaran has launched their new restaurant and bar, The Bay Bar & Grill. Offering a wonderful, relaxed atmosphere, The Bay Bar & Grill serves the freshest locally caught Jimbaran seafood and juicy grilled steaks without the smoke, crowds and noise of the beach seafood venues, and at a very reasonable price point.

With a combination of laid-back charm, locally caught seafood, high-quality meat, soulful live music and lush poolside surroundings, The Bay Bar & Grill is open for breakfast, lunch and dinner. The design draws inspiration from its Jimbaran Bay location, incorporating a large open grill and select hues of blue throughout, including a LED blue lid up bar, reflective of the waters of the Bay. The mixture of local Suar wood and blue glass is inspired by driftwood from the sea, combining with natural slate and galaxy marble to create a relaxed bayside feel, complete with seating formed in the shape of a boat.

The emphasis of the menu is on the fresh, local seafood and perfectly grilled meats but many favorites remain available such as the always popular Karma burger, chicken shawarma, Jimbaran fish & chips, fresh Bali crab linguini and the deliciously slow cooked beef rendang.

The Bay Bar & Grill is a wonderful spot to simply enjoy a cocktail and relax with a selection of libations designed by mixologist Grant Collins that include the Karma Negroni, Cariibbean Cloud, Karma Spritz and the Bubble Bath Martini. The laid-back, pool-side atmosphere is perfect for guests to enjoy drinks in both the seating area or pool lounges whilst cooling off in the 24mlong pool.

The Boutique

The new Boutique at Karma Jimbaran is located at the entrance to the Resort and is no ordinary boutique. The Boutique has the feel of a gallery, creating a special arrival experience for guests by introducing a retail area replete with a curated selection of beautiful artifacts, works of art, local designer clothing and jewelry.

SoulBytes and the Owner Ilario Colli

SoulBytes is a wholly unique, holistic, soul-nourishing coffee roaster and bakery located in the heart of Seminyak, Bali, specialising in excellent coffee and delicious, contemporary Australian café-style food. The driving engine behind SoulBytes’ philosophical and humanitarian goals is owner Ilario Colli. He was inspired by the work of Alain de Botton when considering the premise for SoulBytes; in particular his work Religion for Atheists, in which de Botton discusses the ideal restaurant: “The modern restaurant should be a refuge from coldness and anonymity, a place where customers leave better people than they were when they arrived.” This passage had a decisive influence on Colli’s determination to explore this concept in café form.

A native of Perth, Western Australia, Colli describes himself as ‘a man of letters’ with his interests based in the arts, humanities, literature, philosophy and music. Fluent in English and Italian with a good knowledge of French, German and Spanish, Colli was a brilliant student, studying at University in Perth, Bologna, Stuttgart and Vienna. As a former composer and classical musician, his love of music saw him launch a career as a music journalist, engaged by Limelight magazine, Australia’s foremost classical music publication. His passion for writing led him to begin a novel based around classical music, and whilst researching, to immerse himself in the works of the great philosophers such as Kierkegaard, Nietzsche, Dostoevsky, Musil, Sartre, Heidegger and Camus.

“In many ways, SoulBytes is an attempt to bring many of the major thought motifs of existentialist philosophy to a wider audience, in the hope that they might be able to help others live more happily and wisely,” said owner Ilario Colli. “In this sense, it can be said that SoulBytes has a very strong atheistic, humanistic and even existentialist underpinning. It is, in other words, animated by the idea that in this life, we alone are responsible for creating our own meaning and happiness. SoulBytes was always about more than just serving great food and coffee but also very much about nourishing the soul.”

Colli fell in love with Bali during his first stint on the island in 2014 before moving to Koh Samui to work on his novel Sidonia. He recognized that Bali had become an epicenter of great food and beverages, second to none in terms of sophistication in South East Asia, so in 2016, he returned to Bali, knowing it was time to realize his dream of opening SoulBytes.

SoulBytes’ extraordinary and unique interior is designed by Caroline Usher of Ushers by Design, the same genius responsible for the design of Mamasan, Salazon, and Shanghai Baby.

Central to the design of SoulBytes is a spectacular art installation by Australian artist Jack Bromell, running along one wall of the space. It represents a two-month collaboration between the artist and owner Ilario Colli, with concepts and ideas from Colli’s favourite philosophers, executed in a surreal, dreamlike and emotionally charged style. SoulBytes’ central bar is more of a functionally perfect piece of art, with long solid wooden curves that sweep around to provide the anchor for the tall, refinished steel frame, extending to the ceiling. The frame itself comes alive as a beautiful maelstrom of shadows and angles with the addition of the fantail-bird lighting enclosed within, reminiscent of an Escher painting floating in the centre of the space. There are a variety of tones and textures in each different zone within the space, with a rich colour palette of reds, blues and yellows, accented by strikingly graphic elements such as the mural and the herringbone design of the floors.

Open for breakfast, lunch and dinner, SoulBytes’ food philosophy is to serve original and creative recipes, tantalising both to the eyes and to the taste buds, made with the freshest and highest-quality ingredients and, above all, with passion, compassion and love. Guests enjoy dishes that are a synthesis of the existing and the new, taking contemporary Australian café cuisine and adding unique touches to create delicious and highly innovative culinary novelties. The SoulBytes in-house bakery produces baked delicacies not only for the café, but also for wholesale to businesses throughout Bali and Gili Lombok.

Coffee is a fundamental and defining part of the SoulBytes experience, where good coffee making is an art, and the barista’s work is like that of a skilled artist. The baristas are highly trained and competent, well versed in coffee-related matters and bursting with a passion for their craft. SoulBytes has their own house blend, roasted on-premises in an especially installed roasting lab replete with a state-of-the-art Probat roaster; an inimitable blend using 3 – 4 single origins, each contributing to the overall flavour and unique character. Have Halal, Will Travel

A chatbot named Sofia is helping Muslims find halal food overseas

Directorate General of Immigration Republic of Indonesia reported that 9.1 million Indonesians traveled overseas in 2017, which is an 8.3% increase compared to 8.4 million travelers in 2016 with. With the huge number of overseas travelers, how do we ensure that Indonesians could make the most of their travel time, without compromising their fasting? Introducing you to Sofia, a chatbot that will help Muslim travellers find halal food overseas.

When he decided to study in South Korea five years ago, Mikhail Goh, who practises the Islamic faith, thought it would be easy to find halal food in one of the world’s most cosmopolitan nations. He thought wrong.

It’s not to say that there were no halal food options to be found, but finding them wasn’t as simple as say, if he were in Singapore, to do a quick search on popular food sites such as HungryGoWhere, or in Indonesia where majority of the food option are halal.

“If there were websites out there that discussed halal food in South Korea, they were either hard to find, or any information that I came across wasn’t of much help,” recalled Mikhail, who is now based in Singapore. “Many times, you have to make decisions based on limited information as a Muslim traveller.”

A couple of years later, exasperated with the lack of information online, he teamed up with his wife and her best friend to start Have Halal, Will Travel (HHWT).

HHWT is a content platform that helps Muslims travel with confidence in countries where this can be a challenge, especially without a guide. They started out with an article on how to find halal local food like dim sum in Hong Kong; and this eventually grew to hundreds of articles and guides on the Web, as well as a mobile app and social media channels.

HHWT draws its recommendations from communities of contributors around the world, from London to Bangkok. Often, these writers have travelled to or lived in these cities for years, bringing authentic insider knowledge to travellers on where to find the best halal local cuisine, prayer spaces, and what to look out for when visiting these destinations.

HHWT now reaches over nine million Muslims from Singapore, Malaysia and Indonesia each month, providing valuable information to help travellers plan trips to popular destinations such as Hong Kong, Japan, London, Melbourne and South Korea.

The answer was obvious; HHWT needed a chatbot.

Combining Microsoft’s Azure cloud and its Language Understanding Intelligence Services (LUIS), HHWT’s chatbot now answers most of the questions that travellers ask through the platform every day.

Called Sofia, chosen after users voted for the name in a public poll, the chatbot is online 24/7, assisting travellers with their queries from all over the world, regardless of which time zone they are in. With Sofia, the HHWT team can now significantly increase their engagement level with users daily.

“We created Sofia simply because people have been asking us questions which we found could be answered largely through automation,” said Mikhail, Co-founder of HHWT.

At the same time, through the responses and feedback received from users interacting with Sofia, HHWT can now analyse and contextualise all that input to help provide more personalised content for each individual user, thus serving customers’ needs better.

What was also fascinating was that Sofia was set up in a surprisingly short amount of time. Instead of creating a chatbot from scratch, the HHWT team relied on existing tools that Microsoft provides on the cloud to create Sofia, with the help of technology partner PleoData.

The Azure cloud platform comes with an application programming interface (API) for a QnA Maker; that was the first building block the team tapped on to form answers to commonly- asked questions. Microsoft’s LUIS then enables chatbot designers to draw on datasets already in existence, enabling the team to analyse what users were asking.

“I think one of the really big benefits of Microsoft Azure is the QnA Maker,” said Rachel Tan, Managing Director of PleoData. “It allows any company to be able to release a working chatbot in less than 7 working days, which is quite an amazing feat.”

It helps that HHWT already had an existing set of frequently asked questions (FAQs), which were inputted into the Q&A maker. Though that was sufficient to launch a chatbot as-is, the team went one step further to customise the chatbot so that it could offer more intelligent content to users.

Currently, Sofia uses what is known as a decision tree that lets users narrow down the answers they are looking for. In future, this process will be simpler and more intuitive—the system will automatically answer questions with a deeper understanding, without having to seek clarification.

This next step for HHWT involves sinking its teeth more deeply into machine learning. With larger datasets to draw on after running the chatbot over time, HHWT would be able to develop contextual and personalised content.

Today, HHWT works with tourism boards from countries around the world and global brands to reach out to the Muslim community. As the same time, they are also working with partners to provide functionalities such as the ability to complete travel bookings and payment transactions on the website.

With the scalability of Azure cloud, as well as LUIS, powering the Sofia chatbot, HHWT is now looking towards expansion to more countries within Southeast Asia and beyond.

Whatever HHWT’s plans are, Goh reinforced that their focus over the next two years is to build on their understanding of their consumers needs and wants. “One of the things we are seeking to improve for our chatbot is its search and response – to give us a better understanding of what people are searching for, and from there, better responses and better content,” said Mikhail.

As HHWT continues down the path of getting to know its audience better, the online platform is making an impact that goes beyond a mere search for food. HHWT is changing mindsets, one traveller at a time.

“As a Muslim myself, I feel that Muslims shouldn’t be restricted to just kebabs or nasi biryani,” said Mikhail, suggesting that they should seek out halal ramen in Japan, or bibimbap in South Korea instead.

“To really understand different cultures, you have to eat their food, speak their language, and really get lost in their country. Muslims shouldn’t be deprived from that opportunity,” he added.

A Book about Art and Cultural History in Bali

To celebrate its first year anniversary and to align with the mission from Préférence Hotels to be culturally driven, Maison Aurelia proudly introduced a book about art and cultural history of Bali; “Sanur, Gateway to Inspiration”. The book is an embodiment of Préférence’s mission to share the essence of the hotel’s soul to friends and guests about the timeless beauty of art and cultural history of Bali.

“Sanur, Gateway to Inspiration” tells the history of how Sanur became the entrance for foreigners, including the artists. With its mysterious magnetic pull, Bali’s culture and tradition have been inspirations to the foreign artists living on the island, resulting many wonderful artistic creations. The visual expressions created by these master painters depict mystical landscapes and beautiful locals living harmoniously between nature and the gods. In a way, Sanur became the starting point where the beauty of Bali’s art and culture were discovered by the world. Sanur became the gateway to inspiration to the artists.

“This book is an invitation for our guests to learn more about the culture and the heart of Sanur and Maison Aurelia. We want the journey of our guests to continue even outside the hotel. Curated by Dr Jean Couteau, a renowned art historian who truly has unique insights into life on the magical island of Bali, and Alistair Speirs, Founder of Phoenix Communication, the book features paintings and biographies of prominent artists heavily influenced by Bali namely Walter Spies, Rudolf Bonnet, Miguel Covarrubias, Le Mayeur, Theo Meier, Emilio Ambron, William Hofker, Antonio Blanco, Arie Smit, Donald Friend and Geneviéve Couteau that brought a new, feminine look to Bali’s art.

The late Geneviève Couteau was inspired by Balinese femininity since she first came to the island in 1968. She saw something beyond the physical form of femininity and she painted that to show her peculiar perspective to the world. Geneviève Couteau’s works are exhibited in Agung Rai Museum of Art and as a part of the book launching event, her works are also exhibited at Maison Aurelia.

In addition to paintings and painters, the book also shares the array of Art Museums in Bali, including Puri Lukisan Museum, Le Mayeur Museum, Neka Art Museum, Rudana Museum, Agung Rai Museum of Art, The Blanco Renaissance Museum and Museum Pasifika. The objective of sharing these gems are to enable Maison Aurelia’s friends and guests to learn about the history and to be in touch more of with the paintings exhibited exclusively in these museums.

The book launching was celebrated with a humble concept of event, started with welcome speech from Marc Steinmeyer, Founder and Chief Executive Officer of Tauzia Hotel Management and Anthony Prabowo Susilo, Chief Operating Officer of PT Indonesian Paradise Property Tbk, the event then continued with an enthralling talk show about the book with guest speakers Dr Jean Couteau, Art Historian who wrote and curated the book; Alistair Speirs, Founder of Phoenix Communications who co-wrote the book; and last but not least, Fretty Carolina Hutapea, Brand Manager of Préférence Hotels who shared the concept of Préférence and Maison Aurelia.

Around 50 invitees from media, artists, writers, and Bali’s art influencers after the talk-show ushered to an afternoon cocktail accompanied by Gamelan and Balinese dancers entertainment, as they are then brought into relaxing and calm atmosphere of Maison Aurelia.
