Aman – Leading the Sustainable Dining Revolution

Aman is pleased to announce a partnership with Chef Norbert Niederkofler, to minimise the environmental footprint for food and beverage offerings and to drive the culinary concepts across its global constellation. Completely aligned with Aman’s commitment to a more sustainable future, the legendary chef has won international recognition not just for his three Michelin-starred cuisine at St. Hubertus, his restaurant at Aman partner hotel, Rosa Alpina, but for leading the conversation on sustainable fine dining.

Aman is the first brand to partner with Niederkofler as consultant chef, who will now work with the culinary teams at 33 hotels across 20 destinations to create new menus as well as teaching each property to use sustainably sourced local ingredients. 

From genuine service to innovative wellness – Aman has long prided itself on its pioneering outlook on hospitality. However, the brand has also become synonymous with exemplary design and architecture with its environmentally sensitive approach: building sanctuaries that not only blend into their unique settings but also respect the heritage of their locations.

Niederkofler first joined Aman on this journey through his consulting role at Aman Venice where he continues to work with the team to play a part in their menu and culinary concepts as well as holding events. Following the success of this relationship he will now influence and educate every Aman resort and hotel so they can contribute to a better future for all through the finest, most sustainable ingredients while supporting producers in local communities.

These values are intrinsic to Niederkofler’s approach as sustainable dining is something he practices daily with his ‘Cook the Mountain’ philosophy at St. Hubertus and AlpiNN Food Space & Restaurant, the latter of which is located 2,275 metres above sea level. Using only seasonal ingredients sourced within the restaurants’ vicinity, he ensures that absolutely nothing goes to waste.

This mission, to create a more sustainable approach to gourmet cuisine without compromising on creativity, is one that will inspire the culinary philosophy at Aman properties around the world – from the jungles of Amanjiwo to the couloirs of Amangani.

A movement that has recently grown into a food revolution, sustainable fine dining was formally acknowledged in early 2020 with the launch of a new Michelin Guide symbol. The green Michelin four-leaf clover honours those in the industry – Niederkofler prime among them – who are conserving Earth’s resources in every possible way.

Movement to Support the Role of Mothers during the Pandemic

A mother plays such an essential role in family dynamics. Serving multiple roles that make her versatile, now amidst a pandemic, mothers’ multitasking ability gets continuously tempered with the increasingly complex household tasks to perform. A mother becomes a figure who allows her family to continue to function and to progress. 

Mothers on Mission (MoM) is a social enterprise that provides a conducive and supportive environment for mothers who want to continue to be productive, to achieve their aspirations and dreams without leaving their routines of taking care of the household.

In celebration of its fourth anniversary this year, MoM launches the #StandUp4Moms movement. It is a movement to support mothers to be able to keep their spirits high despite facing various challenges during this time of pandemic.

World’s leading Thai restaurant operator expands its partnership with 1957 & Co. to introduce new full-service Mango Tree restaurants and casual Mango Tree Kitchens to a series of key destinations nationwide, including Beijing, Shanghai and Guangzhou.

Mango Tree Worldwide, the world’s leading Thai restaurant operator, has revealed plans to expand its portfolio of restaurants in China this year, with the launch of up to seven new locations nationwide, including flagship dining destinations and casual café concepts in key cities and major airports.

As the world’s most populous country and second largest global economy, China is an important market for Mango Tree. Thai culture and cuisine have become hugely popular among Chinese consumers in recent years; almost 11 million Chinese travellers visited Thailand in 2019, and an increasing number are now seeking authentic, high-quality Thai cuisine when they return to their home cities.

To cater for this rising demand, Mango Tree intends to boost its collection of restaurants in China by 67% in 2021, from 7 locations today to 14 by the end of the year. It will achieve this in partnership with 1957 & Co. (Hospitality) Limited, its long-standing partner in the country. 

Led by Mr. Paul Kwok, Executive Director & Chief Executive Officer, the company now has nine Mango Tree-branded restaurants in China, including three locations in Hong Kong, two in Guangzhou, one in Qingdao and most recently, one in Shenzhen. All of these outlets have become extremely popular with diners in their respective markets, winning multiple awards including a Michelin Plate for two years running in Guangzhou.

Mango Tree’s Chinese expansion strategy will be ramped up in the second and third quarters of 2021, with the scheduled opening of four new dining destinations in China’s largest cities, and two additional airport locations. New flagship venues are expected to make their debuts in Beijing and Shanghai, with attractive upmarket restaurants, bars and lounges in the downtown locations. 

In Guangzhou, the company plans to complement its existing upscale Mango Tree restaurants with two Mango Tree Kitchens. These café-style outlets will cater to local residents who want delicious and healthy Thai cuisine conveniently located in their local shopping mall.

Finally, the group is seeking to launch two additional airport locations in China, as it caters to travellers on-the-go. Izakaya by OKU Joins Local Japanese Talents for A Special Collaboration

The collaboration seeks to introduce guests to classic Japanese cuisine from the perspective of Japanese native.

Chef Hashimoto Soji and Chef Hatanaka Hirotake will be joining Chef Deni Koeswara of Izakaya by OKU, to deliver authentic flavours of Japan during a three-day event at this award winning Japanese restaurant. This unique collaboration highlights Izakaya by OKU’s signature offerings combine with Japanese home-style classic dishes.

Chef Hashimoto once worked as the captain of a fishing boat who has a board set of scale when it comes to seafood. His hands-on experience working with fishes gave him a solid foundation, as he opened his famed Japanese venture called Tensaki in 1999.

Meanwhile, through this collaboration, Chef Hatanaka hopes to show people the real authentic food of Japan, not the altered version that has been modified for international taste. “When I started to travel around the world and stay at hotels, I noticed that there were always works of art exhibited at Hyatt hotels, starting in the entrance area and all the way into individual guestrooms. I remember thinking, ‘Oh, I see there is a need for art in this kind of context.’ It was different from the context of art with which I was working so I was fascinated. I wanted to try dipping into such a world, but I couldn’t find the entrance, and there was just no way in. So I am happy to have such a special opportunity to display my work in a hotel room, and make my long-held dream come true.”

“Welcome prints are on the walls flanking the entrance. The Flower Parent and Child print is divided in half and placed on the either side. The 10-meter Flower Parent and Child in the garden is covered in gold leaf but as a print, it is such a colorful image, so I divided it into right and left and used Rinpa-style gold and platinum foil for the background.”

 2. Flowerball Rug / Living Room Floor

“This project started about 15 years ago, when Louis Vuitton’s then-president, the late Yves Carcelle, said he had a friend who was a very good handmade rug-maker in India and asked if I would like to make a rug. Each piece was handmade so each one was different. At that time, I was looking for a mechanical finish, so I asked to redo it over and over again. My assistant at one point spent two weeks on the shores of a lake in India giving instructions at the workshop. In the end, the Indian workshop gave up after receiving my repeated critical feedback and we ended up with just a few finished pieces.”

“This is one of those few, so it is very valuable. It is hand- woven, which is an extremely difficult process, but at that time, I didn’t understand how good it was, and I kept making unreasonable requests to make it look more mechanical. Looking at it now, I appreciate this unique handmade texture. I must apologize to everyone who was at the workshop back then. I do like it a lot. Since it is handmade, it is supposed to withstand even wind and snow, and I think it has a beautiful finish. It is a work that contains a prayer to Yves-san: ‘Thank you for your wonderful idea.’”

“These are limited edition plush Flowerballs and are very difficult to produce. We’ve known Matai-san and Seki-san of Sun Arrow, a stuffed animal maker, for over 20 years and they always pour their love into their stuffed animals, breathing life into them.”

“This is a challenging piece I had never made in the past. It portrays the welcoming by these purely cute characters. I was going for the feel of a piece that we might see when visiting a collector’s house that is a European castle.”

“What are the expectations of the guests who will come to stay in this room, I wonder? I want to provide them with the utmost sense of omotenashi (hospitality)!! So, I created a new human-sized Flower Parent and Child sculpture. I hope the guests will take lots of photos with it for posting.”

6. HOLLOW (Size: Height 187 mm x Width 385 mm) / Living Room Desk

“There was a song called ‘Kūdōdesu’ by a Japanese rock band named Yura Yura Teikoku and the English translation of the title would be ‘HOLLOW,’ which was what I made into this work. The title of my doctorate dissertation was ‘The Meaning of the Nonsense of the Meaning’, and emptiness was my theme back then already; but this song really captured my intention in its entirety, which made me happy. This small three-dimensional work is made with Nanbu iron, which is very heavy, and its pedestal uses the Murakami camouflage pattern. The piece was specially made for this collaboration. Among the new works I made for this hotel, this was a work full of new challenges.”

“I wanted to make a space where the guests could relax in a double bedroom and rest with flowers, so I made the bedroom walls and bed full of Flower Parent and Child works. A multicolored flower with its petals filled with smaller flowers—blue-on-blue, purple-on-purple and so on— is displayed on the wall above the bed, and the print is displayed on the wall next to the bed, as if the Flower Parent and Child are sleeping next to you.”

Glenn Tan: Involved in Automotive Business Since Childhood

He is young. He is smart. And he is an expert in the automotive business. Meet Glenn Tan, group chief executive of PT Motor Image Group. PT Motor Image Group is the company that distributes, sells and provides service for Subaru cars in the Asia region, covering Singapore, Taiwan, Thailand, Hong Kong, South China, the Philippines, Malaysia, Indonesia, Vietnam and Cambodia.  

Talking to Tan means talking and discussing the automotive industry. For Tan, it is an industry that keeps developing. Despite being hit by the global economic crisis, Tan says the automotive industry still has a chance to grow in the region, including in Indonesia, thanks to the wide market geography and segment as well as the various types of customers in the country.

Indonesia, indeed, has a huge growing market. Automotives are nothing new for this good looking man, who was born in Singapore on Feb. 5, 1978.  

He has known it since childhood because he was born into a family that ran an automotive business. “My family has been in the business for 50 years. That allows me to understand the automotive industry,” said Tan, who is a go-cart enthusiast.  

Tan is also in charge of Tan Chong International Limited following his appointment as the company’s executive director.

“That means I have to take care all of the businesses under the management of Tan Chong,” he said.  

Tan joined the Singapore office of Motor Image Group in 2001. As the chief executive, he oversees the business and its development as well as the marketing of Subaru cars all over the Asia region, including Indonesia. Motor Image Group works in cooperation with Fuji Heavy Industries, Subaru’s Japan-based holding company since 1986, said Tan.  

He acknowledges that Subaru is not as popular as other cars in Indonesia for a variety of reasons. However, he is sure that Subaru has potential in the country.

“We will continue to introduce Subaru to Indonesians and improve its image,” he said optimistically.  

With Subaru’s Indonesian sales increasing annually, the company is targeting to sell 200 cars in 2010. The Japanese yen has started to strengthen, which is good for Subaru. To boost Subaru sales in Indonesia, Tan is working on breakthroughs and is confident that sales will increase significantly.
