Hailing from Hokkaido, Japan, the seasoned chef says that the dishes are inspired by the climate and food culture of Bali, in all of its striking natural beauty.
“The Japanese-fusion in our menu is also symbolic of the acculturation between the washoku (traditional Japanese cuisine) culture as well as my experience in Indonesia,” enthuses Hiroshi, who also highlights the restaurant’s freshly made soba also known as homemade buckwheat noodle as a must-try for guests.
“At Valle, we aim to bring about a healthy, fun and beautiful dining experience for our guests with a wide range of fresh and high-quality ingredients. For instance, for our signature soba, we use fresh buckwheat flour imported from Horokanai to ensure a top-tier taste.”
