A Global Culinary Celebration Across Asia Pacific’s Most Prestigious Hotels

Taste is memory. And memory, like flavor, is fragile—waiting to be awakened. This year, the Luxury Group by Marriott International invites you on a journey through time, culture, and forgotten culinary traditions with the return of its acclaimed Luxury Dining Series 2025, running from July to September across some of Asia Pacific’s most coveted destinations.

Spanning seven cities and hosted at landmark properties such as The St. Regis Osaka, JW Marriott Jeju Resort & Spa, JW Marriott Bengaluru Prestige Golfshire Resort & Spa, The Ritz-Carlton Perth, The St. Regis Singapore, The St. Regis Jakarta, and The Ritz-Carlton Bangkok, the series is set to reignite the senses by reviving once-lost ingredients and techniques with a bold new narrative: “Forgotten Flavors.”

“This year’s edition is an ode to the roots of global cuisine—reimagined,” says Oriol Montal, Managing Director, Luxury, Asia Pacific (excluding China), Marriott International. “With a broader geographical reach and a diverse cast of culinary virtuosos, we are celebrating ingredients and traditions that shaped global gastronomy but have since faded into the background.”

Each destination in this year’s lineup promises a multi-sensory immersion: from chef collaborations that cross continents to experimental bar takeovers and pastry reinterpretations that are as nostalgic as they are forward-thinking.

Where Gastronomy Meets Storytelling

Japan – The St. Regis Osaka (11–13 July)

A symphony of Japanese precision and international flair sets the tone in Osaka. Chef Takato Kitano of Wajo joins Master Teppan Chef Yuki Oe from The Ritz-Carlton Tokyo for a celebration of seafood, vegetables, and ancestral cooking techniques. Michelin-starred Agustin Balbi of Andō Hong Kong and Chef Michiaki Yoshida of La Veduta then present a Japanese-Italian degustation—refined, unexpected, and rooted in culinary memory. Bar aficionados will enjoy a guest takeover by Hideyuki Saito of Gold Bar, Tokyo EDITION, while Pastry Chef Alex Chong of The Singapore EDITION reinvents the ritual of tea with French-Asian flair. The weekend crescendos with a gourmet dinner by Chef Takatoki Minagawa and Michelin-starred Ryuta Iizuka—a true homage to heritage and haute cuisine.

South Korea – JW Marriott Jeju Resort & Spa (17–20 July)

On Jeju Island, culinary stars Paul Smart, Ryan Byrne, and Jayden Kim create a “Six-Hands Dinner” celebrating the island’s coastal bounty. Highlights include a Midsummer High Tea by pastry chef Sienna Wang and Shigeru Nojima, and a Yeoumul Brunch tribute to Jeju’s legendary haenyeo (female divers), curated by Jin Lee and Hirotaka Nakashima. Master fermenter Kim collaborates with mixologist Yosuke Asano for a unique spirits masterclass fusing Korean and Japanese traditions.

India – JW Marriott Bengaluru Prestige Golfshire (31 July–3 August)

Experience Daawat-e-Aaleeshan, a regal Indian feast by Chef Riyaz Ahmed, followed by a whimsical Alice in Wonderland-inspired farm-to-table dinner in the lush JW Garden. The Five Elements Dinner brings together top chefs including Neeraj Rawoot, Saiful Agam, and Vu Van Thien in a multisensory showcase. Lazy brunches by the lake and world-class cocktail collabs—such as the Shaken & Stirred session with mixologists Kuldeep Rawat and Simone Ciambrone—seal the weekend with flair.

Australia – The Ritz-Carlton, Perth (17–15 August)

At Perth’s culinary frontier, Chef Brian Cole (Hearth) and Chef Katsuhito Inoue (Kyoto) present East Meets West: open-fire Australian cuisine married with Japanese kaiseki elegance. A farm-to-table menu, Farmers’ Bounty, pays homage to the land and its stewards. Hearth’s Afternoon Tea redefines tea service through regional flavors, while cocktails by Marco Barsotti and Kentaro Wada reimagine mixology through a global lens.

Singapore – The St. Regis Singapore (29–31 August)

Celebrating Singapore’s 60th independence anniversary, Chef Chan Chung Shing and Michelin-starred Daniel Wong reinterpret Cantonese cuisine with “Forgotten Flavors” at Yan Ting. The Astor Grill hosts a Six-Hands Dinner with Chef Vladimir Veiga, Fabio Granata, and Angelo Sergio—a tour de force in fine dining. Meanwhile, celebrated pastry chef Angela Lai teams up with Ng Chee Leong to redefine local desserts, while bar stars Marco Dongi and Paulo Naranjo craft inventive cocktails in a city-hopping collaboration of taste.

Indonesia – The St. Regis Jakarta (11–14 September)

The Jakarta chapter begins with award-winning pastry chef Janice Wong elevating Indonesian cacao. Chef Arne Riehn of Michelin-starred IGNIV Bangkok brings Swiss finesse, while Chef Tino Gabriel curates a multi-course Nusantara Family Dinner complete with live Wayang performance. Afternoon Tea by Wong and Chef Kevin Lee is modern, bold, and artful, while a Punch Room Takeover reinterprets Batavia’s punch heritage through mixologists Yasuhiro Kawakubo and Giovanni Graziadei.

Thailand – The Ritz-Carlton, Bangkok (25–28 September)

The grand finale unfolds at the newly opened Ritz-Carlton Bangkok. Michelin-starred Chef David Toutain, Valentin Fouache, and Adam Catterall (Roganic Hong Kong) collaborate on a terroir-forward Six-Hands Dinner. A brunch by Chef Tala Bashmi—MENA’s Best Female Chef—blends Middle Eastern, Thai, and French flavors. At Lily’s, Chef Tala hosts a private dining event for ten guests—intimate, soulful, and unforgettable. And at Calēo Bar, cocktail legends Simone Rossi and Angelo Sparvoli (The Savoy, London) headline a chocolate-themed afternoon tea and guest bar experience unlike any other.
