UFF is celebrating its 10th anniversary with the theme “Heritage”, but don’t expect anything old school here. Mozaic is mixing tradition with bold innovation, dishing up experiences that’ll make your taste buds question everything they thought they knew.

Day 1 – Friday, May 30: Pastry Porn with Gareth Whitton
The festivities kick off at Tipple Room by Mozaic, where Gareth Whitton—co-founder of Melbourne’s cult pastry spot Tarts Anon and guest judge on MasterChef Australia—will be serving up a pop-up pastry experience from 1:00 to 4:00 PM. Expect glossy tarts, crisp textures, and flavors that punch you in the mouth—in a good way.

The lineup:
- Chef Blake Thornley, Mozaic’s main man, whose restaurant is #25 in the La Liste 2025 and repping Indonesia solo on the prestigious Les Grandes Tables du Monde.
- Chef Gareth Whitton, bringing the sweet heat from Down Under.
- Chef Christian Martena of CLARA Bangkok, an Italian maestro with Michelin Guide cred and a spot on the 50 Top Italy list (#23, no big deal).
Together, they’ll craft a menu that fuses Indonesian soul, Italian flair, and Aussie boldness—basically, the Avengers of fine dining.
