Elevating the Bar Scene in Ubud, Ambar at Mandapa Unveils

The most awaited bar presents its new look with a reimagined experience of curated cocktails and Japanese fusion gastronomy 

Ambar at Mandapa, a Ritz-Carlton Reserve proudly unveils the new look of its fine bar and dining destination on 27th November 2022. Ambar which means sky in Sanskrit word is a haven for cocktail and gastronomy enthusiasts who seek an elevated experience and a sense of discovery in Ubud. 

Adjacent to Mandapa’s Wantilan lobby, Ambar welcomes guests to an elegant open space decorated with wooden elements and surrounded by greenery. The new outdoor wooden deck takes a scenic moment to a new level overlooking the abundant lush forest of Mandapa village during the golden hour.

Accommodating up to 60 people, Ambar is a celebration of the rich flavors of Bali paired with the traditional beverage and culinary techniques of Japan. It is a destination to explore the reimagined creativity behind the handcrafted cocktails and Japanese fusion gastronomy. 

Ambar’s inspiring menu will ignite the tastebuds and is presented in various tasting options, from Belantara, an Ubud focused cocktail menu incorporating handpicked ingredients of the surrounding forest and Japanese drinking culture, to create a modern take on hyperlocal herbs, fruits, and spices, such as Yuzu Negroni, Sarapan Reviver and Koko Kohi.

The Fruits of the Forest features a selection of classic cocktails, such as Lemon Grass Gin & Tonic which is a combination of unique twists and eclectic spirits including a range of Gin & Tonic’s and Tropical Aged Cocktails for guests to sample. 

The Canopy Collection consists of a list of unique spirits that are the specialty of Ambar and which constantly evolve to keep creativity flowing. A diverse offering of international wines, curated craft beers, and non-alcoholic sippers also adorn the selection of drinks to be enjoyed. 

Complementing the handcrafted cocktails, guests can indulge in the Japanese fusion gastronomy such as Udang Salad, crispy prawn topped with tonkatsu served with green soya olive oil, Toro Tartare, fatty tuna served with ginger, spring onion, egg yolk and avruga pearl, selections of Usuzukuri and Maki, as well as the sweet delights such as Matcha Mascarpone Cream Puff and Strawberry Mochi Ice Cream Sandwich.
