Chef Take Over Series at 1928 Restaurant Continues with Balinese Chef I Wayan Kresna Yasa as Guest Chef

The monthly dining event at 1928 Restaurant, Chef Take Over Series, continues with another remarkable guest chef. This August, the Chef Take Over Series will welcome Balinese chef I Wayan Kresna Yasa to take over 1928 Restaurant’s kitchen and present some remarkable Balinese-inspired dishes on 26 and 27 August 2022.

Chef Wayan was born in Nusa Penida, Bali. Throughout his career, he has worked at various restaurants in the United States, including fine dining establishments and Michelin-starred kitchens like Blue Hill in New York and Acadia in Chicago. Nearly a decade ago, he returned to Bali and helped Will Goldfarb launch the award-winning Room4Dessert before joining the culinary team at Desa Potato Head. 

After completing his tenure as Culinary Director at Desa Potato Head, he and his wife Mary, have opened their own place called Home by Chef Wayan in Pererenan – serving up his favorite Balinese recipes. Recently he debuted his book Paon: Real Balinese Cooking, which he dubbed “a cookbook of true Balinese food and recipes.” The book shares more than 80 dishes alongside essays and beautiful photography capturing the life, culture, and food from across this widely beloved Island of Gods.

Chef Wayan will bring Balinese-inspired modern dishes, including some from his multi-generational family recipes, to Jakarta at the 5-course dinner events.

During the dining events at 1928 Restaurant, Chef Wayan will showcase Balinese-inspired dishes including some from Wayan’s multi-generational family recipes and favorites from his home island of Nusa Penida.

Some of the dishes include Rujak Ikan (cold smoked toro, gooseberry, passion fruit, and pomelo), Ledok (potato risotto, cuttlefish, cured egg, garlic chips, and salmon roe), and grouper fish served with asparagus, tomato, and broadbean in sune cekuh broth.

The 5-course dinner service is available on 26 and 27 August with the price of IDR 928,000++ per person.
