An elevated bistronomic experience is expected at Bali’s first aquarium restaurant.
The Apurva Kempinski Bali recently unveiled the appointment of Andrea Astone, as the new executive sous chef at the resort’s premiere venue, Koral Restaurant. Known for his background in luxury establishments, Andrea Astone is directly working with the team to create a spectacular culinary journey.
Starting his culinary career in 2000, Chef Andrea first started his studies in the culinary department, thanks to his family. Since completing his formal education at 16, the Italian native has been accumulating experience in various areas of kitchen work. His career started in his homeland of Italy, and he continued his journey to Lyon, France, in 2006, where he first worked in a two-star Michelin restaurant.
His portfolio continues to grow throughout the years, and he gained more experience in lavish restaurants, including at Don Alfonso Italian Restaurant at La Mamounia in Marrakech, and Don Alfonso in Sant Agata, Italy. Eager to discover new culinary destinations and broaden his knowledge of the cuisines of the world, Chef Andrea Astone finally finds himself in Koral Restaurant, taking the rich taste of the archipelago and elevating it with his European flair.
As Koral Restaurant is known for incorporating fresh local produce in its dishes, Chef Andrea has been taking a close look at the Indonesian ingredients. He has also been familiarising himself with the unique flavours of Indonesia and South East Asia. And now, Chef Andrea is ready to surprise by bringing his expertise to satisfy curious diners.
When it comes to the work environment, the chef places great importance on teamwork. “At the end of the day, it is the effort of the team,” he shared. “When everyone is involved in the process, they also take pride in everything they do.” Listening to the opinions of his team, as well as involving them in the creating process, is his way of building a solid unit, and ensuring that everyone feels respected.
With extensive culinary experience under his belt, Chef Andrea will oversee the cuisine offerings at the restaurant, while also leading the team to elevate the already existing exceptional culinary experience.
