Savor Chef Lamberto’s specialty dishes such as: Carne asada in achiote marinate, cooked medium, with roasted guajillo salsa, wild mushrooms and organically grown cherry tomatoes; Beef and Chicken Enchiladas; Tampiquena, beef filet mignon, with mole cheese enchilada, guacamole, poblano chile potato gratin; and Camarones al ajillo, perfectly cooked jumbo shrimp in a garlic, chipotle sauce. Selections of Potres (Mexican Desserts) are also available for your enjoyment. For Tequila lovers, enjoy the finest selections of classic tequila cocktails to accompany your dining.
The Mexican Food Extravaganza is available during Lunch and Dinner from May 18 to June 2, 2013. Priced at IDR 288.000 ++ per person for Lunch Buffet and IDR 995.000++ per person for Sunday Brunch inclusive of unlimited tequila cocktails, mojitos, margaritas, Billecart-Salmon champagne and wine, a sizzling Mexican à la carte menu is also available for both Lunch and Dinner. Chef Lamberto Valdez
Chef Lamberto Valdez’s culinary journey spans across 8 destinations in 5 countries over 25 years, where he professes culinary arts in both casual and upscale fine dining restaurants. Lamberto believes in using only the freshest local ingredients, and likes to keep the taste simple.
Lamberto grew up in the pacific coast of Acapulco, Mexico, where in between school and fishing, he did his apprenticeship in the legendary Princess Hotel of Acapulco. Lamberto’s culinary adventure brought him to the California coast where he explored San Francisco to San Diego in between surfing and cooking. His passion for cooking saw him rise from commis to executive levels at high-end resorts including Le Meridien, Marriot, and Sheraton. Lamberto has cooked for US President Bill Clinton, when serving as Executive Sous Chef at The Ritz Carlton Manalapan, Florida.
In 2003, Lamberto opened his own restaurant El Chamol at Lake Worth, FL, a 150-seat upscale modern Mexican Nuevo Cuisine fine dining restaurant where he was personally involved in the detailed planning of the restaurant concept, kitchen design and layout.
In 2009 & 2010, Lamberto was appointed executive sous chef at the fivestar diamond resort W Hotel, Doha, Qatar where he worked alongside world renowned three star Michelin Chef Jean-Georges Vongerichten, in setting-up and establishing two elegant concept restaurants. Lamberto has cooked for the Qatar Emir.
By 2011, Lamberto was promoted to Executive Chef, where he was selected by renowned three star Michelin Chef Alain Ducasse “Enterprise” to oversee the food operations at the first Mix concept restaurant by Alain Ducasse in Puerto Rico. Fluent in English, Spanish and French, Lamberto is presently the preopening Director of Culinary and Services at the upcoming Westin Ubud Resort & Spa.
Located on the seventh level of the Keraton building, and named for the Javanese word for “river,” Bengawan is a spacious indoor-outdoor restaurant with lush, green foliage, soothing water features, and outdoor seating on the balcony with spectacular views of Jakarta below. Open seven days a week for breakfast, lunch and dinner, including Sunday Brunch, Bengawan features a customized menu of both a la carte items and a sumptuous buffet accompanied by an extensive wine list with international labels. The menu utilizes fresh, local produce and seafood along with the highest quality of beef imported daily from Australia and the United States.
